1 bunch basil
1 garlic clove, peeled and finely chopped
¾ cup finely grated Parmesan
½ cup pistachio nuts
¼ cup olive oil
1 pinch salt
1 pinch freshly ground black pepper
Instructions:
1. Dough: Discard the brine, then rinse and leave the beans to drain. Mix the beans with water into a smooth paste by hand or using a hand blender. Add the yeast and mix quickly until dissolved.
2. Pour the bean paste into a bowl and mix in the rest of the ingredients for the dough. Mix into a loose dough. Cover and leave to proof for around 4 hours at room temperature or until the dough has roughly doubled in size.
